Vegan Meatball BBQ skewers

If you want to try something different for your BBQ that's still super quick and easy to make... look no further, this recipe is for you. Add whatever spices and herbs you like to these super tasty and colourful skewers..

Preparation

1. Chop veggies

Cut the courgette, red onion and bell peppers into pieces
that you can easily thread on a skewer.

2. Assemble the skewers

Mix the mince with the spice mix in a large bowl until completely combined.
Lightly oil your hands and roll the mince into balls. Thread alternately 3 pieces of each vegetable, and vegan balls onto each skewer. Keep them covered in the fridge until you're ready to BBQ!

4. Grill, serve, enjoy!

Preheat the BBQ waiting until the charcoal is white before cooking. Coat the grid with some oil. Grill the skewers on the BBQ for about 10 minutes, turning often until piping hot throughout. Serve with the chilli sauce, crusty bread and extra salad.
