150 g rice noodles
1 garlic clove
1 tsp grated fresh ginger
4 spring onions
1 red pepper
1 tbsp vegetable oil
200 g tenderstem broccoli
few sprigs of fresh coriander
4 tbsp sweet chili sauce
25 g cashew nuts

Sweet Chilli 'Chicken' Stir Fry

Need a tasty mid-week meal in minutes - this is for you! Our Sensational Fillet Pieces cook in just a few minutes - just enough time to chop a few veggies (or open a pack of pre-chopped stir fry mix) and you're there! Serve with noodles or rice - bosh!

Preparation

Peel and chop the garlic. Grate the ginger and cut the spring onion into about 1 inch pieces and the bell pepper into strips. Depending on the size, cut the broccoli in half lengthwise. Coarsely chop the cashew nuts.

Cook the noodles according to the instructions on the pack. Drain and keep warm with a lid on the pan.

Heat some oil in the wok pan and fry the pieces until golden brown, then transfer them to a plate and keep warm.

Stir fry the ginger and garlic briefly in the oil and add the broccoli, bell pepper and spring onion. Stir-fry everything in a few minutes until crispy.

Add the marinated pieces, stir fry briefly and season with soy sauce and some sweet chili sauce. Serve with the spring onions, cashew nuts and lime wedges on the side.
