Heat the oil in a large pan and cook the onion with the herbs for a few minutes until the onions turn translucent.
Add the carrots, garlic and mushrooms and fry a few more minutes.
Then add the tomatoes, water and lasagne sheets and simmer for 30 minutes. 10 minutes before the end of the cooking time add the mince and cook until piping hot throughout.
Serve immediately and finish with a few basil and Parmesan leaves.
