400g pack Garden Gourmet Sensational Mince
1 red onion, finely chopped
2 tsp paprika powder
1 tsp cumin powder
freshly ground black pepper
good pinch cayenne pepper
½ tsp ground cinnamon
small handful fresh parsley, chopped
small handful fresh coriander leaves, chopped
1 tbsp harissa paste
4 tbsp vegan yogurt
320g mixed salad leaves, to serve
4 pitta bread
200g fresh tomatoes, sliced
120g cucumber, sliced

Moroccan Style Kofta Kebabs

Try out these deliciously spiced Moroccan kebabs for a BBQ or under the grill if its raining... so quick to make and simply served with a big bowl of colourful chopped salad and pitta bread you can't go wrong. You can switch out the harissa yogurt for tzatziki if you like- see our tip below.



Mix the spices, onion and half the herbs into the minced meat (saving the harissa for the yogurt). Shape the mince around the skewers like a long sausage.


Mix the harissa with the yogurt.


Preheat the BBQ or grill to a medium heat. Grill the kebabs on the BBQ in about 5 to 8 minutes until browned and piping hot throughout.


Chop the tomatoes and add to the salad leaves with the cucumber. Toast the pita bread on the BBQ or under the grill and serve with kebabs, harissa yogurt and salad. Scatter over the herbs and get stuck in!


Culinary tip

Easy tzatziki
For a simple tzatziki sauce finely chop half a cucumber - place into a clean tea towel or strong kitchen roll and squeeze out most of the water. Mix the cucumber in a bowl with 4tbsp 0% fat Greek yogurt, salt and pepper and a squeeze of lemon juice. Add a small handful of freshly chopped mint and chill until ready.
