Ingredients

400g Garden Gourmet Sensational Mince
6 small flour tortillas
1 small red onion
1 lime
1 small ripe mango
1 jalepeno chilli, deseeded and finely chopped
200g fresh vine tomatoes, deseeded and finely chopped
a small bunch fresh coriander
1tsp chipotle paste (chili paste)
400g chopped tomatoes
160 g kidney beans

Preparation

Preheat the oven to 180 ºC (160ºC for fan ovens) or Gas Mark 4. Press the tortillas into the muffin cups
and bake them for about 5 minutes in the oven until they colour and become crispy. Cut the red onion into thin half rings and sprinkle generously with lime juice.

Cut the mango into small cubes and mix with finely chopped jalapeno pepper, chopped fresh tomatoes and coriander. Season with some lime juice.

Fry the mince following the instructions on the package and season with the chipotle paste. Add the tinned tomatoes and kidney beans and heat until piping hot throughout.

Spoon the chilli mixture into the cups and top with some salsa and soused red onion. Garnish with the fresh coriander and tuck in!
