Heat the oil in a pan and fry half of the onion with the rice for a minute or so. Add the stock and cook about 15 minutes, stirring occasionally.
Jamaican Jerk Style Spicy Meatballs with Rice 'n' Peas
Add the beans through the rice for the last 5 minutes.
Mix the Sensational Mince with the Jamaican Jerk seasoning then roll into walnut sized balls. Fry the meatballs in a little olive oil over a medium heat for 6-8 minutes or until piping hot throughout. Remove to a plate, cover and keep hot.
Remove the rice from the pan and fry half of the onion, peppers and chilli in the pan for 2 minutes. Add the spices and cook for half a minute.
Add the can of chopped tomatoes to the pan and simmer for 15 minutes.
Add the meatballs and corn back to the pan for the last 5 minutes.
Serve the rice with the balls and the chili sauce. Garnish with coriander.
