3 small peppers (mixture of colours)
150g romaine lettuce
1 small red onion
1 small cucumber
1 lemon
125ml vegan yogurt
2 tbsp mixed Greek olives
2 tbsp olive oil

Greek-style Lunch Box Salad

How about this for lunch one day soon? Loads of lovely colourful veg with Garden Gourmet Sensational Pieces, olives, quinoa and a super easy tzatziki is bound to be a sight for hard working eyes!

Preparation

1.

Cook the quinoa according to package directions and let it cool.

2.

Cut the cucumber lengthwise into quarters, cut it into thin slices and mix with the yogurt. Season with lemon, salt and pepper. Cut the peppers into strips and the onion into half rings.

3.

Fry the Mediterranean pieces according to the instructions on the pack.

4.

Season the quinoa salad with lemon, olive oil, salt and pepper and toss in the olives.

5.

Divide the peppers with the onions in one compartment of your lunchbox, put the quinoa salad with olives and the Mediterranean pieces on some lettuce in another space. Spoon the cucumber yogurt separately into a sealed tub and you're done!
