160g Garden Gourmet Sensational Mediterranean Seasoned Fillet Pieces
1 tsp olive oil
3tbsp low fat, plain yogurt or vegan yogurt
1½tbsp reduced fat mayonnaise or vegan mayo
2tsp tikka masala curry paste
2tbsp mango chutney
1tbsp raisins or chopped dried apricots (optional)
2tbsp fresh coriander leaves
a sprinkle Nigella or black onion seeds
4 slices sourdough bread, lightly toasted
80g mixed watercress & rocket salad

Jubilee Coronation Chicken Sandwich

Coronation chicken reinvented for the Jubliee - this scrumptious sandwich will be a huge crowd pleaser for any street party!

Preparation

1. Fry the fillet pieces

Heat the oil in a frying pan and cook the fillet pieces for a couple of minutes before stirring in the curry paste. Fry the pieces until they are fully coated and hot throughout. Turn off the heat and leave to cool.

2. Make the dressing

Mix the yogurt and mayonnaise together then stir in the mango chutney, add the cooled fillet pieces and mix until combined. Add a tiny splash of water if needed to loosen the mixture.

3. Toast the sourdough

Lightly toast the sourdough bread then load one half with the rocket salad. Top with the coronation chicken mixture, sprinkle with the Nigella seeds and sandwich with the second piece of sourdough. Repeat for the other sandwich and tuck in!
