400g pack Garden Gourmet Sensational Mince
1tbsp olive oil
1 red onion
1 garlic cloves
2 red peppers, deseeded and chopped
400g can kidney beans, rinsed and drained
2 x 400g cans chopped tomatoes
1 tbsp chili con carne spice mix
small bunch fresh coriander
260g white long grain rice
50g guacamole
1 lime

Chilli Sin Carne

We love a bit of aromatic spice and heat at Garden Gourmet but you can adapt this recipe to whatever level of heat you like! Serve with rice or nachos or just some slices of avocado.. yum...

Preparation

Heat the oil and fry the garden gourmet mince in a large non stick pan over a medium to high heat, breaking it up a little as it fries for 5-8 minutes. Transfer the cooked mince to a bowl, cover and keep warm. Add the onion and peppers to the pan (you might need a little more oil) and cook for 3-4 minutes over a medium heat. Add the chilli con carne spice mix and continue to fry for a minute.

Add the chopped tomatoes and kidney beans and simmer for 15 minutes over low heat.
Taste the sauce and season if needed, then add the cooked mince back into the sauce. Heat through until piping hot throughout. Chop the coriander and sprinkle over the chilli san carne.

Cook the rice according to the pack instructions. Add the drained kidney beans to the sauce and simmer a few more minutes. Serve the chilli san carne with the rice, a dollop of guacamole, a lime wedge and a few coriander leaves.
